Alternative yeast types


Anyone ever use anything besides regular active dry yeast or fresh yeast? I have been using red star but I recently ended up with some brewing yeast and champaign yeast. I know they are strains that can tolerate alcohol but I don't know how else they differ from regular bakers yeast. I have "heard" that a local pizzeria used to use brewers yeast and I was wondering how these might turn out I a pizza dough.

Chuck, I haven't tried any thing besides fresh yeast, dry yeast and starters (some time ago). But, check out this thread:

Interesting. I think I am going to try the brewers yeast for a pizza this weekend. Maybe I will make a 2nd batch of dough with the Red Star than I normally use as well. That way I will have a back-up if it doesn't go well or something to compare to if it does.
