Brick Cheese in Monterey?


Any recommendations for finding Brick Cheese in the Monterey Peninsula? (Monterey, Carmel, Pacific Grove, Marina, Del Rey Oaks)

since we have to live without Buddy's Pizza, I'd like to try to make my own.

I live in Santa Cruz and have looked everywhere with no luck. Instead I used a combination of Trader Joe’s Cabot, Monterey Jack, Havarti and low moisture part skim mozzarella. I have only had real Detroit style at Tony’s in SF (so good) and I think mine was pretty solid. I really enjoyed the Detroit style recipe from Peter Reinhart’s “Perfect Pan Pizza” as well as the one in the “Pizza Bible”.

Thanks for the tip, Andrew. I'll try it. Someone suggested I try cheese from a Mexican market, maybe "queso fresca"? Someone suggested it might have the nuttiness that makes Brick so good. Maybe I'll try that....any tips for going in that direction?

I have never used Mexican cheese but why not. Let me know how it turns out. Experimenting is half the fun
