Burning crust?


I bought a new backyard gas pizza oven and I'm using a steel stone. I get the temp. up to around 550 degrees. My problem is the crust is getting done before the toppings get done. The stone can't be raised since a higher rack would not hold it's weight. Before I got the pizza oven I used my kitchen oven, which worked pretty well. Any ideas?

Are you putting diastatic malt in your dough? If so try cutting down or leaving it out all together.

Is it the bottom that's burning or the edges? If it's the bottom, you can use a pizza screen.

Vince's suggestion is great too. If you're finding that the whole pizza is burning, not just the bottom or the edges, then cut down the malt or use a lower protein flour.
