Detroit Red Top Pizza


This is my first time in making the Detroit Red Top Pizza out of Tony's Pizza Bible....I followed the directions exactly as he stated them....turned out very good.....airy bready crust...burnt cheese crust (best part for me) and crunchy bottom. I am in pizza heaven!!

I used King Authur Sir Lancelot flour with good results......used prov and moz mixed for cheese..Johnsonville hot Italian sausage grilled with some appelwood/hickory smoke on it and little pepperoni on top
...I got some brick cheese coming soon.....can't wait to try that.

Looks amazing Mark! The edge is my favorite part. I have dreams about that crust. :-)
