Detroit Style Pizza Pan


I have a le creuset cast iron roaster that is 10 x 14. Can that be used instead of purchasing a Detroit pan? Will the results be the same?

Is it enameled cast iron? Since you already have it, it's definitely worth trying. It won't be the same, but it doesn't mean it won't be good. Old school Detroit pans are made from blue steel and are seasoned before using. Cast iron is a great conductor so I think you'll get good results, but if it's enameled, you could have trouble spreading out the dough and keeping it in place.

I'll be honest, I know I may get pounced on here. I have bought a deep sided metal lasagna pan from Dollar General ($4) and made Detroit style pizza in it. The pizza came out great, had that cheese around the edges blacked and fried like it should be. I think you'll be fine. I am in Ann Arbor quite often and Detroit area, I really haven't seen the "difference" from "authentic" Detroit pizza pans from $4 pans.... But it could be just me also.

I agree with Lance. I use a cheap pan and get good results. I think it is because the pan is dark.
