Detroit Style Pizzas and White Cheddar


I've been on a Detroit-style pizza kick lately and am wondering about the cheese used on the edges. The Pizza Bible calls for a white cheddar, which is an amazing choice. Given that I don't know too much about the style, is using white cheddar for the edges normal practice for this style?

Hey Raj,
I have used white cheedar for the edges, and the reason....I like the way the white cheddar taste when it is charred....it also charres to a brown color.....when I used the mozz/Brick combo...it charres black..it also is good...The Cabot white cheddar is so far, my favorite........is it the normal practice...not for sure on that part...
