Diastatic Malt Alternative?


I cannot find diastatic malt powder. I was wondering if I could just replace that with sugar for the recipes in The Pizza Bible. Would I use same amount of sugar as malt or less? Thanks

If you can find malted barley flour use that. It works almost as well as the malt.

Aya, I ordered mine on Amazon. It's pretty inexpensive and you can buy it in reasonably small quantities. Malt powder serves as a sweetener, but compared to sugar, there's more going with it. It's also a browning agent, but it is enzymatic and helps break down the starches in your dough. A lot of bakers swear prefer diastatic malt because it makes their dough easier to work with.
