Dough balling


Before the balling process should the dough sit out and rest or can it be balled directly out of the refrigerator?

That's a good question Ryan. You can probably ball it directly out of the refrigerator. I'll try to dig up more information though.

It might make a difference in terms of fermentation.

When you bring a dough up to room temp it speeds up fermentation. Now, if you then reball the dough into individual dough balls it could have an impact on the outcome of the pizza. It will take additional time to cool the balls down again.

I always reball with a cold dough.
