I have a 10 x 14 pan....I use 18 oz dough for the pan....I am having problems with the dough not quite strechting to the corners.....I can get close but always a separation.....any advice appreciated.
That could be for a few reasons
Dough is too cold
Not enough hydration
Dough is not matured long enough
Water is too hard

Hey Tony....thanks for the help......not for sure if the water is the problem...I will try some Spring water...but I do use my own tap water...filter through Brita.....on my last DSP No4 I added a little more water........I will let it sit out longer when I pull it out of the fridge..that may be it....I know cold dough will snap back......thanks again bro for the tips!
