Fresh yeast vs dry active


Should I activate the fresh yeast in warm water of 100° before I put it into the dough bowl which consists of water at 75°?

When adding sugar and salt, does the yeast need to be added before the sugar and salt?

Johnny, the water temperatures and procedure you describe should be fine for cake yeast (aka fresh yeast). After you mix the water and yeast, you can add the salt. I wouldn't mix the salt into the water though. Add the salt once you've mixed the flour, water, yeast and sugar together.

Same goes for oil if you're using it. Add the oil last.
