Made the two grandma style pizzas today. Both using the exact same dough made from All Trumps except one used regular Red Star Yeast and the other used Munton's ale yeast. They definitely smelled different and the dough with the ale yeast clearly had a slightly more aggressive rise. After cooking though, I couldn't tell the difference. The texture and taste was the same to me. Not sure if that was due to the fact that both had strong flavored on them from the sauce, olive oil, etc. maybe I will try again but just bread or something. One pie was my usual favorite... mozzarella, sauce, olive oil and basil. I had guests soI had to load the other with meats to suit what they like. That version was pretty good too.
