How long can Master Dough last in the Fridge?

I started the 3-day process (Master Dough w/o Starter) one day too early.......wondering if the dough can sit in the refrigerator for an extra day or two? What stage is it best to keep the dough in for the extra day - the bulk fermentation stage or the two dough balls stage?

I've done 5 days recently with no probs. Turned out very good.

I'd do the bulk and divide the dough into individual dough balls maybe 12 hrs before use.

Depending on the flour protein and temp of the dough before you put it in the refrigerator and if you don't place your dough in plastic compared to aluminum or steel which will be colder then you can do a 5 even 6 day cold fermentation with no issues.
