How long should poolish rest?


How long should the Poolish rest before using? One place I saw 18 hours, another says to use within 8 hours. Thank you

There's no one specific number. It's going to depend on water temperature, flour temperature (if it's been refrigerated) and room temperature.

I'd say hours is on the longer end. Using cold water, room temperature flour and a room temp of around 70F, I let my poolish sit out for 12 hours.

You can tell if a poolish is at its peak if a dome has formed. After its prime, you'll notice that it starts collapsing. If you're making it for the first time, keep an eye on it every few hours and you'll know pretty quickly.
