Two Questions :
1) I got a new pizza oven but is a Double Deck.
Top Temp: 360c
middle temp: 360c:
I've try to set up to bake in the top part of the oven but sometimes take longer, I preheat the oven for about 1hr before baking,
Top Temp: 200
Middle temp 300.
I use normal flour because in my country it's hard to get 0 or 00 flour.
which kind of normal flour is recommend？
