Indian pizzeria market


Hi all,
How about getting oo flour in India at reasonable market rate or which Indian brand resembles to oo flour for pizza making, although presently I am using brand from which my pizza looks like artisan style I am happy and people also like our pizza, but still curious to make pizza more flavorful.
I have many questions to ask so starting with most general inquiry.

You might want to send these companies in your country an email to see if they would sell to you or to ask where you can buy their flours on a retail level (supermarket).

We don't have silicon dough to practice and it's not available in India where we can find it to get my staff trained well.
Have attached vedios and link, please help us to expand italian cuisine in India as much as possible.

Thanks for your reply I appreciate your kind gestures, but I have already done research on this topic and tried all brands which gives me my end product, in India flour manufacturer are not aware of oo, protein, gluten and all stuff so it's difficult to communicate with them. At last I got my flour but it's not oo but still gives nice end product.
Mike can you put some light how to make my pizza cook faster, I mean what should I add in my flour do that it gets cook faster.

Rahul,

I'm not sure if there's any dough conditioner or ingredient you could add that would make your pizza cook faster other than to increase heat. If you're talking browning agents, than malt or sugar and even olive oil will help getting a nice coloration.

Regarding the tossing, cut up an old towel into the size of maybe 18 inches, dampen it and start having fun tossing it.

i am also an interested pizza maker in India. i've tried sourcing high protein dough at a reasonable price but i was unsuccessful. I have come across this website call swissbake.in . You ought to check it out if you haven't already.

Kindly let me know where and what kind of flour gives you the best results in india.

Hi Rahul,
You pizzas do look artisan, I've never got such beautiful looking crust.
Which brand of flour did you use here? I'm interested in making pizzas but i'm not getting good results using normal Maida(Indian all purpose flour). If you can let me know the brand of flour you used, it'll be great help.
