Material of Proofing Bowl


Will fermenting dough in an aluminum bowl in the fridge impact that dough? The stacking aluminum dough pans seem like they would be great for saving space in the refrigerator, but some sources claim that aluminum and yeast shouldn't be in contact with each other.

I have been using the stacking dough pans for 10 months occasionally along side plastic tubs. I can't tell the difference.

I've tried plastic and aluminum and have had good results with both. A lot of New York style pizzerias use round aluminum containers.
