I have a compact electric oven, reaches to around 800F temp.
I Would like to make a Neapolitan Pizza in 2-3 minutes.
What would be the recommended heat to use at the dome and at the surface?
I use 57% hydration, 00 flour (TZ4 which is 320W)), and 280 grams dough ball, 100% Mozzarella balls cheese.
