Not Enough Rise in My Sicilian


I have been making your Sicilian recipe for a few months at my home. It has turned out terrific.

But the last two times now in my pizza restaurant I am having issues.

It is not rising after it has been stretched in the Sicilian pan and when I go to bake it, its again not rising and the top is not cooking? The bottom is fine but I am getting a much different product on the top of the pizza.

Any thoughts on what could be going on? Thanks AJ

For the rise problem, the likely culprit is your yeast. Check to be sure you have yeast that has not expired. Always test in warm water to see if it's active. No bubbles - it's dead. Browning problem? Add diastatic malt per the TG recipe.
