Perforated Deep Dish Pans


The 12" deep-dish pans I ordered arrived today, sort of. One of the pans they sent has a perforated bottom. Needless to say, I'll be sending it back and having them send me the correct one. UNLESS, I would ever need a 12", carbon steel deep dish pan with a perforated bottom. When would a person use a pan like this?

I can only guess why someone would want a perforated deep dish pan. The "regular" perforated pans are supposed to provide a crispier pie. I'm guessing the holes keep the pie from getting soggy. It's probably the same idea with the deep dish.

You're probably better off with the non-perforated pan, but that's just my two cents.

Thanks Raj. I'm still planning on having them send me the correct (non-perf) pan, I was just wondering if this was something I should keep in my arsenal. BTW, I'll be trying deep dish again tomorrow evening (made my dough last night). I'll let you guys know how it comes out. Thanks again for all your advice.
