Pizza has yeasty smell


I have have used the master dough receipt to make my dough but after I have baked the pizza it has a yeasty flavor. I have used the red star brand active yeast.

How can I eliminate this yeasty flavor?

Can I use less yeast instead of 4.5 grams?

Since you're using the 4.5 grams of yeast, I'm assuming that the recipe you made is the Master Dough without starter. Just wanted to confirm.

How are you measuring the yeast? Just to make sure that your scale is accurate, try using a measuring spoon to confirm. It should be 1.5 teaspoons. This sounds silly, but it doesn't hurt to make sure.

Red Star is a high quality yeast. If anything were to go wrong with the yeast, it would be dead. Not the other way around.

Two other things that come to mind are water temperature and whether or not you're letting the dough rise in the refrigerator.

Hi Raj,

I did not use starter. I measured the yeast using a scale with 1g precision.
The water I used was lukewarm. The yeast does not seem to be dead since the dough rose.

I let the dought rose 1 hout outside the refrigenrator then 24 hours in the refrigerator and finally I did the balling and I srored in the refrigerator for 36 more hours.
