Pizza-Romana dough question

I'm making Romana pizza for the first time tonight. I have a question about the dough. On p233 of the Bible it states to let the dough rise at room temp for eight hours before rolling but on p228 it says to remove it from the refrigerator and let it warm to 60-65 before rolling. Is the 8 hour rise at room temp necessary? Thanks for your help! Will post pics!
