Pizza Sausage Basil Béchamel Cheese
1 tsp dried yeast
¼ cup + 1 TBSP warm water (80 °F)
1/4 cup whole-wheat flour
2-1/4 cups all-purpose flour
1-1/4 cups cake flour (non-self-rising)
1 TBSP + ¼ tsp diastatic malt powder
1-¼ cup ice water
1 tsp salt
1 tsp olive oil
Put warm water in a mixing bowl and sprinkle yeast over it. Mix. Set aside.
In a mixing bowl, add the three flours and the malt. Mix slowly for 1 minute.
Reserve 2 TBSP ice water and add balance to flour-malt. Slowly mix for one minute.
Add the yeast mixture. Rinse yeast bowl with reserved ice water. Slowly mix for 1 minute.
Add salt. Slowly mix for 1 minute.
Add olive oil. Slowly mix for 2 minute.
Transfer to a smooth non-wood surface. Gently massage into a ball. Put in slumber pan. Cover with plastic wrap. Leave in kitchen for 1 hr. Put in ice box.
Day 2. Remove from ice box. Transfer to mixer. Slowly de-gas for 30 seconds.
Transfer to a smooth non-wood surface. Gently massage into a ball. Put in slumber pan. Cover with plastic wrap. Put in ice box.
Day 3. Remove from ice box 2 hrs. before baking. Transfer to smooth floured surface. Make pie.
3/5 lb Chicken-turkey sausage, with basil and pine nuts, thinly sliced
1 cup Béchamel Sauce
1 cup fresh basil leaves, finely chopped
½ lb soft Asiago cheese, grated
½ lb Fontina cheese, grated
1 handful dried Parmesan cheese
Pre-heat oven to 500 °F.
Make Béchamel Sauce.
1 cups whole milk
2 TBSP butter
1-3/4 TBSP all purpose flour
1/8 tsp salt
1/8 tsp nutmeg
In a small pan, heat the milk just to the edge of boiling. While the milk is heating, put the butter in a 2 to 3 quart heavy saucepan and melt the butter over low heat. After the butter melts, add the flour and stir constantly with a wooden spoon for about 2 minutes until all the flour is incorporated. Don’t let the flour brown. Remove the flour-butter pan from the heat and add 2 TBSP of hot milk. Stir in the milk. Add a bit more milk and keep stirring. Continue adding and stirring. When all the milk is in and incorporated, add the salt and nutmeg and return the pan to low heat and keep whisking until the sauce is like thick cream. Maybe 10 minutes. Mix in the chopped basil.
Spread the Béchamel evenly over pizza dough. Distribute sausage pieces. Sprinkle grated cheeses on top. Put in oven and bake until the crust is lightly brown and cheese is melted. About 10 minutes. Remove from oven.
