Source for 13” Chicago Deep Dish Pan (Black Steel)?


This isn’t a new topic, but I was hoping someone could direct me to the place where they purchased the Chicago deep dish pan recommended in the Pizza Bible. FG Pizza & Italian, Peach Suite, and Amazon don’t seem to carry it or have been out of stock for a long time. I’ve gone to Allied Metal Corp website but it’s not obvious which pan I should be ordering (no pictures on their website) or even if they carry it at all. I’ve managed to get the recommended Sicilian and Detroit style pans but this one has eluded me. Suggestions? Thanks!

Hi - I have been looking for the same thing. The dishes I have seen are too large or too small. I did find a great one but it was a bit larger. Amazon has been no luck!

Hi Heidi and Paul,

The 13" Allied Chicago deep dish pans are hard to find. A lot of people have expressed interest. We'll look into carrying these on the store. I'll find out in the next couple of days and post an update.

These pans are great. I have a black Allied Steel Sicilian pan and was blown away by how nice it was.

You can get the Allied pans at Wasserstrom, they special order directly from Allied...

Thanks Raj! Could you include the exact information I would need to provide them to get the recommended pan. Model number would be the most helpful.

Well I looked on wasserstrom and did not find anywhere that I could special order. I did contact them though so maybe they could get it. However I did find the tin plated steel American Metalcraft 13x2 that I can season with oil to make it black (saw a blog online describing how to do this).

I needed to purchase the rocker cutter anyway so I think I am going to order this pan from the Webstaurantstore. Best I could find. Also I could pay through amazon so it was really easy to purchase.

Would be great if Pizza Bible got these to sell!

Hey Paul, this pan should treat you well. Using a heavy-gauge pan is key for Chicago-style, and this one is the right weight.
