Starters - Can one simply use dough mixed the day before


Starter consist of water, flour, yeast. Can one simply use dough mixed the day before? Only differences this would have versus starter recipe in the Bible would be the water/flour ratio and the day-old dough would have salt and malt in it.

Hi Eddie,

You certainly could do that. While I've never tried it, I've heard of pizza places incorporating dough from a previous batch into a new batch to help with fermentation and flavor. It's similar in concept to a starter, but given the differences in yeast, temperature and other factors, you'd need to adjust accordingly.
