stone and steel


You mention using either two steels or two stones as the preferred oven set up. I have one of each. Is there any disadvantage to using one of each?

I think that's great. From our tests the recovery time was a lot quicker with the baking steels. I would put the stone on the highest level and the steel at the bottom for optimal results.

Do you not like to go over 500 for the oven temp? is that because of the two stones?
I had always used 550 in my oven

I like to
Go as high as possible. So I prefer 550 but the readon why we say 500 in the book is because most if the populations home ovens only go to 500 so we set that as the bar. Best of luck and thanks for the questions
