I went to the farmers market today and bought some Early Girl Tomatos. These tomatoes are amazing and they are from Dirty Girl Produce. It's a little early for these but I heard since the weather has been so hot they came in early. Here is the process below. This one is a little different than what I put in the book. Minus the Rosemery and added Basil. I took several

De stem all tomatos and wash ( if stems are tuff to take off wait till you peel tomatos after bake)
40 early girl Tomatos - small in size
Brush all tomatos EVOO - Corto
Place in 1/2 sheet pan
Cook at 550 for 15 minutes or until skins detach and soften
Place all tomatos into bowl or container and add
3 pieces pressed garlic
3-4 basil leaves
Cover with plastic wrap and let steam and cool for 30 minutes
Discard garlic and basil
Take away all skins if possible and drain then run through a food mill. Scrape off bottom of mill and add to the sauce
Spoon in more oil, salt, pepper, oregano, one fresh basil leaf and a 4 is tomato paste..
