Tonight's Pies


Made 4 pies tonight. Same dough for all of them: 50/50 All trumps / Caputo. 750-800F temp. 2-2.5min bake time. Overall pretty happy with the results, but happy is a relative term. :-)

Here's the line up:

1. San Marzano sauce, Grande fior di latte, red onion, kalamata olive, serrano peppers.
2. Fontina, Truffled sottocenere, whole milk mozzarella, fried sage and truffle oil.
3. Fried eggplant, baby spinach, sliced garlic, whole milk mozz, roma tomato.
4. Heavy cream, scallions, mozz, porcinis, shiitakes, creminis, and morel mushrooms.

The mushroom white pie was the crowd favorite. by far.
