Two Questions...Over rising...


The book never talks about any negative results that could be possible.
1. Will I get any negative results if I let the BiGA/POOLISH rise for too long (25 or 30 hours)?
2. Will I get any negative results if I let the dough rise in the refrigerator for too long (60 hours)?

What is the maximum rising time for all BIGA'S/POOLISH and all DOUGHS??
