Usually 20oz (567 grams) for a 18" and about 16 oz (440 grams) for a 14".

It's personally up to your discretion. I've seen them all over the board. Here is a rule of thumb I use 2 oz under your 14 inch is thin, so 12oz, 14 oz for your 14 inch medium and 16oz for your 14 inch is thick. Also remeber we all push out pizzas differently some thinner some thicker and that plays a very important role. The strength of your yeast, type of flour (strength and gluten) and oven temp for oven spring does as well.
