Welded Blue Steel Pizza Pans

I located a source for welded blue steel Chicago and Detroit deep dish pizza pans. Just wanted to know the minimum depth required for these pans. The pictures look like between 1 1/2 inches and 2 inches. I sent an email to the manufacturer to get the exact depth. They come in multiple sizes with the same depth.

I've only heard of blue steel Detroit-style pans. Never Chicago deep dish pans though.

The depth is about 2.5". This style of pan is hard to come by these days though. I was able to snag this one just before they ran out. These days, everyone is leaning towards the Lloyd Pans. They're similar in form factor, but are coated and behave slightly differently. They're available in welded and non-welded styles and don't need to be seasoned.

I've got one, but haven't gotten much use out if yet.

As far as Chicago-style pans go, I'm going off memory, but 2" sound about right. The key here is getting a heavy gauge metal. Allied Metal makes some amazing pans steel deep dish pans, but there are others too.

What brand are you considering?
