What is the best all professional brand mozzarella cheese


What is the best brand mozzarella cheese to but for New York or Chicago style pizza? I have access to professional brands.

Grande brand is without a doubt the best mozzarella cheese. It's pricier, but man, it's good.

It's also possible to get it at some grocery stores.

Thanks, just bought a 6 pound block of Grande at a restaurant food supply store. It looks really good through the packaging. I will have it on a pizza Sunday night after the dough does a bulk and an individual dough ball rise according to The Pizza Bible.

Hi Ken, I've seen stocked at most Whole Foods in the Bay Area. Mollie Stone's also has it.

Grande is a great cheese. Love it. Mollie Stones charges an arm and a leg, though, for a pound...here in Sausalito it's almost $9 a pound.

A worthy sub is Safeway's Lucerne brand. It's the only mozza I have found on a retail level that's great for pizza., except for TJ's former "North Beach Mozzarella" produced by Cascade Dairy out of Hayward. The Lucerne has a nice melt, string and it comes with a nice tang to it.

If you decide to try the Lucerne brand, I always go 50/50 whole-milk and part-skim with some grated Pecorino thrown in to prevent clumping.
