Whole wheat dough


One of my friends is being stubborn

Anyone have a whole wheat pizza dough recipe or could i use whole wheat flour in the master dough recipe??

You (or the friend I guess) want whole wheat for the flavor or health aspects? Whole wheat will cut the gluten strands, making the dough more difficult. If they just want some wheat flavor just swap out some of the white flour for wheat and rye flour in the starter. I did this once (1/4 rye, 1/4 wheat, and rest white) and was shocked how much wheat flavor it added (considering it was only a tiny amount of the overall flour, since this was only the starter).

Just in the starter. So ballpark is a couple tablespoons of each rye and wheat total. This isn't going to make it super wheaty, but it had way more flavor come through than I expected.
